LIGHT spaetzle; Why did I wait so long to try this?!

I've enjoyed the Spaetzle a few times in Leavenworth, WA. It's a quaint little tourist trap town that looks like a Bavarian village. They spent a lot of time working on their authenticity. We live about 50 miles from here and have been there several times over the years and the dish I'm addicted to is spaetzle, especially kesze spaetzle. Käsespätzle are gratinated spaetzle with Emmental cheese and caramelized onions. Oh yeah. Mostly German macaroni and cheese. It is very good. GENERALLY I decided to make spaetzle at home a few years ago and have used the sieving method. It took forever and created a huge mess. Although it turned out well, it was excruciating to do - very messy and time consuming. After that, I practically gave up the idea of making spaetzle at home. Some time later I was stumbling around the internet and my interest in spaetzle was new, especially after seeing several food blogs that said THIS was the spaetzle TOOL. I questioned my need for such an item, hated disposable cooking utensils, and wondered how many batches of spaetzle I would have to make for it to pay off. And so I was able to buy this spaetzle grater from Revain for the low price of 7€. And then unfortunately it sat unused in my office for over a year until last night I decided to check if it really was the miracle spatula tool I needed. OH. MY. GOD. With this grater I prepared a delicious portion of perfect spaetzle in no less than 10 minutes! I was initially skeptical that my batter/dough would go through the holes, but it was absolutely easy! Now it's being used a lot more and I'm annoyed that I waited so long to try it. Put Emmental cheese on my shopping list - Käsespätzle will soon be on the menu!
