Great when things are simmering

I bought this mainly when I need to cook something on the stovetop for an hour or more at a time. By leaving the protector on, I can shake the pan a little from time to time without having to use an oven mitt every time. It's also nice when working with multiple pans, you can just slide the cast iron to one side or the other without needing extra protection. This holder holds the heat very well - if the head isn't high you can just leave it in the pan and it will stay within a comfortable temperature range. Otherwise, it is better to use a potholder. It doesn't offer quite the same level of control as a potholder or towel, and unless you're going to be touching the pan that often, it generally doesn't make sense to keep the holder on the handle anyway. Obviously the oven mitt and towel are a bit more flexible in terms of what they can grab. However, they hold the pen better than this one. I'm thinking of either sewing in a magnet or rather putting some flat silicone rings on the inside of this holder to give it a little more grip. oven for a long time, I recommend.
