Review on Mercer Culinary Millennia Black Handle Chef's Knife πŸ”ͺ - 10-Inch Wide Hollow Ground Blade for Ultimate Precision by Gina Cravalho

You get what you pay for

I've been trying to find a use for this knife for two years and I rarely - and reluctantly - use it. It's ridiculously heavy and the length is uncomfortable. I found 10 inches to be overkill and I really don't need anything more than an 8 inch chef's knife for most cutting tasks. However, my main criticism of this Mercer knife is that it doesn't hold its edge more than a few times. Regular honing is not enough to preserve it. It needs to be sharpened. I tried using it because it takes up valuable space in my knife block, but found that in my kitchen it's only for finely chopping mounds of previously coarsely chopped herbs or onions (made with a 6-inch tool). chop. a chef's knife.) For these specific tasks, the Mercer's length, weight, and rocking curve work well enough, but to be honest, an 8-inch chef's knife is better suited. It's also a thick knife, irregularly shaped and never sharp enough to easily cut through a tough winter squash, for example.
