Review on Wusthof Classic 2 Inch Paring Knife by Ronald Dimatulac
A reminder that sometimes expensive things justify their price.
This really is the perfect paring knife, at least for now. Lightweight without being flimsy. Well balanced in hand. My first test of this was peeling some very ripe peaches, and it made things easy without tearing the skin when slicing or digging into the peach's soft flesh. "invisible tool" - you just cut things exactly how you want and never think about how to use the knife - it just becomes an extension of your hand and mind. I hesitated to pay the price but I am very satisfied and will look for other Wüsthof ikon kitchen knives.
