Lightweight All-Purpose Skillet

This 16-1/2" x 9-1/2" reversible cast iron Utheer skillet works great with my Camp Chef Ranger II camp stove. The width is more than adequate, to cover 2 burners without overhanging. A slightly smaller size is better as you don't have to balance the pan over the burners and carry around extra weight. The corner cut is enough to support a 1/2 thick pan while still hot with some oven mitts. This angled carry design maximizes pan space compared to other slotted carry handle designs. The surface of the pan is fairly flat on both the flat and ribbed sides. There are no pits or significant raised areas. On the flat side, however, the surface isn't as smooth as a traditional cast iron skillet. The pancakes are slightly bumpy for a perfectly smooth golden finish on the presentation side. I washed the surfaces with soap and water and put them on the stove with a light coating of oil to fire them up and flavor the surface even more. After 3 times the fried egg won't stick if you use a tablespoon of butter/butter for 2 eggs. There are no bacon fat ridges, but raised edges prevent fat from dripping off the rim of the pan. I just have to blot the grease with paper towels. This pan is also useful on the grill. Tender fish may not work on the grill, but this pan is great for tender proteins or thin veggies that can fall through the grill and stay in the pan. I seasoned the ribbed side before roasting the steak. Sweet marinade of short ribs clinging to the ridges. But after cooling and soaking in water, they removed the charred sugar with a blue non-stick sponge. No hard steel wool or green dish sponge required. After drying I oil the surfaces. Overall, I'm very happy with this pan for my small camping stove, which saves space and weight while still allowing full enjoyment.
