I'm making sushi in a restaurant and we use traditional bamboo rolls wrapped in cling film. The non-stick properties worked as advertised, the mat broke after just a few coats. (I work five hours a shift and can make five to seventy rolls a shift) definitely not for restaurant use but maybe as a novelty at home to help or eliminate clean up
