Of the 4 plates I've bought this is by far the best. The first was part of a $10 bread baking kit and it was awful. The blade would not come loose and was blunt from the start. The second was the UFO knife, which worked great with an easily replaceable blade, except it wasn't curved. I make baguettes twice as often as boules/batars and I want chowder! I got a third record which was good except it didn't have much grip and the blade ran down the handle at times. When I received this all my problems were solved! The handle was large and firmly held, the blade was curved and easy to replace, and there was a stopper to keep the blade from sliding down. It also came with a set of 9 or 10 blades and a leather sheath that fits over the blade, which the third didn't.
