Bought to replace the knives I had before my wife. She is particularly picky about cutlery, as is my mother-in-law. I often work with knives made of all blade steels and have decided to do this for a number of reasons. Steel has an edge, but correcting it is not difficult. In addition, steak knives had to be serrated. Four months later, the knives are still sharp. I only cut off one edge. My version of a close shave. Dry the knives completely before putting them back in the block and never clean them in the dishwasher. These knives will last a lifetime with little maintenance.
