Great knife sharpener.

UPDATE 20 months later: I still love the Trizor. I didn't have to sharpen my handle. Every once in a while I run it through the polishing guides and it's perfect again. I once sharpened my pocket knife, but given the abuse it's not surprising. My friend is a Japanese chef and I showed him my handle. He sharpened knives and liked that. (Not his sushi knife) Almost 2 years later I still highly recommend the Trizor. I bought this pencil sharpener after many months of research. I had a 15 year old Chefs Choice 120 that has seen better days. I know Chefs Choice will fix it for $40, but with round-trip shipping, insurance, and points earned, it wasn't worth it. I'm glad I did. My everyday knives are a 20 year old Henkel Santoku and a 13 year old Kyocera Ceramic Chef. I like very sharp knives. I test the sharpness by piercing the receipt with a knife, not cutting it, but pushing it through. I was happy with the 20° edge but would like to try the 15°. I prefer 15°. Can't say one is sharper than the other, but 15° has less drag. I was worried about losing a lot of metal in the rebuild, but that wasn't a problem. At first I used a cheaper knife to get used to the new machine and see how it works. The rails on this machine are better than the 120. There is less room to play, which I like. I sharpened my santoku and 3 inch pocket knife with equal ease. I can't say which edge will last longer, but I'll try to remember to update this review in a few months. I tried to post a video demonstrating the sharpness of my trizor grab.
