Sharp is possible: cutlery and knife accessories

We've never been so thankful for bloody fingers! (To kid). But seriously, the knives that I thought could almost be thrown away were sharp again. Knives that I thought were sharp enough are now super sharp. If there's one negative, it's that some knives aren't designed to sharpen the bottom of the blade 1/2 inch.

This sharpener is almost too good

I bought this to avoid buying a new set of knives. I'm very glad I did this. I was able to easily sharpen my knives to the point where I almost get nervous using them. When your knives get dull for a while, you get sloppy when you hold them or when the blade touches your skin. When sharpening them with the Chef'sChoice Trizor XV EdgeSelect Professional, you need to be more careful. I love this sharpener and it saved my knives. This device is very efficient.

It has been a while.

This sharpens better than anything I've tried and I've tried quite a few sharpeners and sent my knives in for sharpening with mediocre results. Was it about four years ago (during that time the power went out while I was using it; I went away for about eight hours only to come back to find that most of the time I was gone it was "dragging" " - no problem. Protect your investment

Good knives can be a great investment, how sad to see it wasted on a cheap sharpener. I once had a villain who gnawed at the blade's irreplaceable metal, trying in vain to gain a decent advantage. Fast, easy to use and razor sharp!

Oh my god I love this thing. I let my knives get duller than I care to admit because it was too much of a hassle to get the whetstone out regularly. After seeing this on America's Test Kitchen I decided to give it a try and I'm glad I did. Resharpening the blade was quick and easy. And after that I cut through everything with minimal pressure. The paper test WORKS! for kitchen and dining room

Fast and Efficient

I am very satisfied with this knife sharpener. I have a large collection of Wüsthof knives and use them often. But after reading a Cook's Illustrated review a few years ago, I bought an 8-inch Victorianox chef's knife for about a third of the price of my Wusthof knife. I typically use if for tasks that don't require hitting the point of the blade to pierce something hard or dense. Great knife sharpener.

UPDATE 20 months later: I still love the Trizor. I didn't have to sharpen my handle. Every once in a while I run it through the polishing guides and it's perfect again. I once sharpened my pocket knife, but given the abuse it's not surprising. My friend is a Japanese chef and I showed him my handle. He sharpened knives and liked that.
