This thermometer works with both infrared and probe. So far I've only used the infrared option. I've used it when tempering chocolate and it's compact enough to hold in the same hand I hold the bowl. I also like that it's not in the form of a weapon like the others. It's easier to aim when multitasking because it's easy. Another great feature is that I can set it up for a full hour. That way I don't have to keep turning it on while my hands are busy. I use the centimeter setting and it reads to 1/10th of a degree. I'm glad I didn't spend money on a more expensive brand!
