Review on ๐Ÿ”ช Enhance Your Culinary Experience with Case Household Cutlery Knives: High-Quality Blades for Every Recipe by Susan Johnson

Super functional but not pretty

Firstly, this is not a fancy kitchen knife meant to look pretty. The handle was a bit rough and the blade was well sharpened but not polished. I've sanded the handle a bit and applied some Danish Oil and it looks and feels a lot better. I really like an industrial/utility blade and have found factory sharpened blades to be great for what I like. There is no protrusion behind the edge, making sharpening very easy. I believe Case's "Tru-Sharp" steel falls somewhere between 420HC (which Buck uses for many knives) and 440A (which Cutco uses for all of their knives). In other words, it's very stain resistant, easy to sharpen, strong but not super hard, and has average edge-holding properties. Certainly NOT Supersteel, but very useful. In 2 minutes with a sharpener similar to the Spyderco Sharpmaker, this little paring knife is ultra-sharp: it completely shaves my arm or leg in one pass. I can't usually get that kind of an advantage with inferior steel. This is an excellent knife for fine fruit peel work and scalpel manoeuvres. It could be used as an office knife but is a bit short. Overall I love it for the price, just don't expect the usual Case Cutlery beauty.
