I'm a professional chef!

This is my third damask knife! I have two Calphalon Katana knives that I have had for 4 and 6 years, both hold the blade very well and are very durable! As for the Okami, I was nervous because it's a Japanese knife made in China! Let's remember that the Chinese are incredible sword and knife makers too! The knife is beautiful and razor sharp right out of the box! The balance is perfect and the egg-shaped wooden handle feels good in your hand! It's very light, which is perfect if you use the knife for hours! I just sliced in carrots, onions, celery and chicken and it all went through like butter! I just added a paring knife to my cart! That's a bargain price! This is a newer company, I expect prices to go up once the brand is better known!
