We definitely prefer softened butter at the table, and this marble crock keeps a quarter pound fresh and spreadable on the counter for a week or more. I wash it by hand and let the stick of butter come to room temperature before adding it to the round bowl. I've never had a problem with oil falling into water or spoiling. In fact, we forgot the filled pot and left it in our country house for four months, and the oil looked great when we discovered it! (Of course we didn't eat it.)
