Wow these pans are AMAZING!. And a great buy for the price. I bought these to replace a similar quality stainless steel cookware set I bought in 1980. These new pots and pans are heavy, well balanced, heat up quickly and evenly, and are a dream to clean. The surfaces don't really stick: they have a treated inner surface that's smooth and releases food easily, the pans don't retain taste or smell. I mainly use wooden and silicone utensils, but you can use stainless steel: I've used them occasionally and they don't seem to scratch. A note from the manufacturer: if you use more salt when cooking, be sure to clean the pan quickly after use: the salt can damage the inner lining and cause food to stick. . I wash them with regular dish soap with a scouring pad, rinse in hot water and towel dry before letting them air dry on a rack and they look brand new.
