I have become hell-bent on reproducing a cheesecake I remember from my youth; unfortunately, it's taking a lot of practice shots to get there. My old pan actually started peeling up metal during the last baking so I decided to purchase a new one. When I saw the 3 sizes being offered I jumped on it because I always have shortbread cookie crust, custard, and sour cream topping left over from the largest pan, so now I'm using the smallest to make a quick cake, too.
