There is a difference between regular hard anodizing and non-stick hard anodizing. Please note this is hard anodizing only and there is no non-stick coating. Food cooked at high temperatures therefore sticks and burns. I use it to cook roti on low to medium heat. Also, I needed something without a non-stick coating, so I ordered this one. It serves my needs. I can also cook very tasty naans in this pan because as the naans cook, they stick to the pan as I rotate the pan over the flame, which is exactly what I wanted. It discolors a bit with use, but the functionality remains the same. Plus it's super light. If you are looking for a non-stick pancake pan, this one is a good candidate!
