Nice flat sheet steel. The size was a little difficult to manage until I bought an angle grinder, but it was the only option that would arrive soon enough (it had first class shipping). and there is some steel left that I will use later. Although the knife was a beginner, the knives set up well in warm peanut butter (faster oils like Canola or Park 50 supposedly work better, by the way). Judging by the sensations when sharpening, the large one turned out to be about 60 hours, and the small - about 62-63 hours. Both have a good edge and hold it decently well. I still have a lot to learn but I don't think you will be disappointed with this product.
