To all the chefs who are knife snobs.

Firstly I don't like the dull hue on the handle but over time it wears away the fur. This knife can work, it can handle the abuse of a commercial kitchen. Blade retention can be easily maintained with a RADA sharpener which will keep this knife sharp at all times. After sharpening, just put steel on top and you're ready for another week or more of volume prep. I like a flexible blade for all tasks. I've used this for salmon fillets, halibut, chicken, cut sides and fillets. The design beats all of my VG10 blades, hardened and high carbon. I'm a chef from high-end kitchens to large institutional venues, but this is my workhorse and refined blade.
