He does exactly what he says. There are three discs that change for different thicknesses of the "drawing". Minus one: Since the discs are interchangeable, they are not fixed in the ground. This means that with almost every push the disc gets stuck on top (clamp) and had to be put back in place EVERY TIME. If you are working with a small amount of rice, this is not a problem. A big plus: some rice presses have holes on both the sides and the bottom. This will splash hot water on your hands. It doesn't have those side holes and is just as effective when pressing. I have both types. Made broccoli and cauliflower. It worked well.
