I have made venison 4 times with this machine. I set the max temperature to 158 and the timer to 5 hours. I set another timer for 2-1/2 hours and turn the trays upside down. I also flip every single piece of jerky at this point. The beef jerky has been great every time. I also like that it turns off automatically when it's done. I think this is a great dehydrator, especially for the money.
