Beautiful but picky and poor quality stones

I'm new to stone cutting, so my experience is limited. I tried using a flat whetstone but couldn't maintain a fairly constant angle - some knives sharpened better than others. It takes a lot of practice to be successful at it, and most people don't have the time for it. I only want to sharpen my knives once a month or so which is why I bought this one. So far things are working as expected. Setup is a little finicky, especially when trying to find the right angle. I wish there was some sort of built in sensor that works using a cellphone with the Winkel app, but is a bit impractical on larger phones. The nut that secures the turnbuckle to the stem doesn't hand tighten well - you'll need pliers to tighten it to prevent slipping. It can be replaced, I'll have to find a suitable one at the hardware store, preferably either winged or hexagonal. It also doesn't need to be attached as long as you lock the attachment piece underneath. Leaving it free improves the articulation of the mount, but increases the risk of it shifting at an angle. Once set up, it works mostly intuitively, but requires practice. to achieve smooth and even push/pull movements. The stones included in the set are clearly of low quality and wear out very quickly. They also appear to be rougher than I expected for the review, although I'm not an expert on this. I'll try to find some decent aftermarket diamond wheels to use. Looks like the EZE-lap SF series will fit and they're available for $15-20 each. There are cheaper ones but they look patchy. I will update this review accordingly. With the new Work Sharp Precision device costing around $50, while this device is cheap, it's not as good as it used to be. However, work sharpening is more private, while this allows for (even) more modifications and stone/blade options.

Pros
  • Absolutely Awesome!
Cons
  • Not bad, but...
