1200 grit? suitable for kitchen and dining room

This stone did a great job removing metal but the 1200 grit side appeared much rougher than advertised and the knife blade was quite serrated when tested on paper. However, I have a 3000 diamond stone, which quickly smooths the edge and the knife passed the "paper test" without any problems. (Hold a piece of paper with one hand so that it is hanging down and gently press the knife on one edge of the paper at an angle. If the knife is sharp, it will cut the paper easily and cleanly.) After a while of research I think this is because diamonds embedded in this stone are not single crystals and have protruding jagged tips. After some use these tips will break and the grit is closer to 1200 grit. Oh as it has a diamond coating you don't have to apply a lot of pressure which is unsafe and can result in the knife blade snapping on the blade. Stone that damaged the edge.
