John Boos is well known for the quality of their wooden cutting boards. These are probably the most affordable option among those boards, but they are still of great quality. Many chefs recommend cutting boards be made of maple as these are.One thing some folks don't know is that you should have several cutting boards and use them for specific things so their is no chance of cross contamination. We bought 3 of these boards. One is for Meat, another for Fowl/Fish and the last is for Vegetables. We used a wood burning lettering set to label the side of the boards as to their use. M for meat, F for Fowl/fish, etc.Another really nice thing about these boards is their size. You shouldn't store them on their sides, but standing on their feet they still take up very little valuable real estate on your counter. These do require maintenance though. You must oil them when you first get them and periodically there after. If you don't, you will end up like some reviewers with cracking. The time period between oiling really depends on how dry/humid an area you live in and even more importantly how dry/humid it is in your home. We will be oiling ours month, which will take about 5 minutes each.
