I am a skilled butcher at a popular butcher shop owned and operated by a local family. We may be small, but we release a lot of products. In a fast-paced, high-volume environment, I even work with the weight of my fillet knife, which plays an important role in my productivity. Less wrist fatigue makes the butcher very happy. This blade works surprisingly well. Although I mostly use a scimitar and meat cleaver, getting a fillet of beef perfectly trimmed with little to no waste takes a good filleting knife. This blade removes silvery skin instantly and effortlessly. And quickly takes care of all the little details I need to do, like fluffing up roast strips or jerky. In a nutshell.
