Superior Steel Made in the USA

The Case brand has always been synonymous with quality since I was a kid over 60 years ago. When we needed new kitchen knives, I went shopping and compared steels and prices. The Case brand has proven to be the best steel for the money, although they aren't the cheapest, you get what you pay for. Chance will tell you that the steel in this knife is NOT stainless and should not be washed in the dishwasher or wet cleaned. You are not joking. Pros: Great steel at a good price. Steel stays sharp. Most of the time I just need to touch up the blade, and every few months, because I can't stand a knife that isn't razor sharp, I completely re-grind and sharpen the blade. The Bad: The heel of the knife is square, leaving a point that can cut itself. I rounded the spine of the knife with a whetstone which made it more secure. With today's society attuned to litigation, I think Keyes would have simply stamped round heel plates or added padding. Deformity: Black walnut and unfinished knife handles. Mine showed some grinders/grinder marks. My biggest complaint is that they are unfinished. You have to seal them yourself. I put a commercial oil sealant on it and will continue to use it if necessary. All in all these are great knives and I'm glad I bought them. They are not the cheapest and not the most expensive. You get what you pay for, which is not the case with some expensive offerings.
