My favorite knives are now twice as sharp

I've been a big fan of Kyocera ceramic kitchen knives for a number of years. They are amazingly sharp and meet almost all of my cooking needs, except for any task that requires torque to be applied to the knife. For these tasks, I also have (and recommend) JA Henckel's Soligen stainless steel knife (also bought from Revain). Tomatoes. My Kyocera knives always get the job done quickly and easily. My steel knives too when fresh and properly sharpened, but that's an extra job that Kyoceras never requires. Theoretically, the Kyocera will also become dull over time, but this has not yet happened in years of daily use. But when the time comes, all I have to do is drop it off at the nearest national Kyocera office, as I did once when I managed to crack a chip out of one of their knives, and have it mailed to me as good as new became. . (The warranty officially only covers manufacturing defects.) This new line of steak knives is said to be twice as sharp as the previous one, although I've never found reason to doubt the sharpness of Kyocera blades. The new knives' point and heel are intentionally blunt to protect them from accidental cuts. Plastic handles are dishwasher safe as long as they don't snag, although I prefer hand washing all my knives. Another caveat in the manual is to always use a plastic or wooden cutting board and not (for example) cut directly into glass, marble or granite. Highly recommended!
