Great knife: Chef's knife

I am a serious home cook with over 10 years of professional cooking experience. I have used many different knives and despite the fact that there are many very good brands, Shun has become my favorite. Now I have several different Shun Classic pieces. Everything exceeded my expectations. The 8" Classic Kiritsuke is my newest addition and probably my favorite. To begin with, no knife I've ever used is sharper than the Shun. Kiritsuke is extremely well balanced and comfortable to grip. The size makes it ideal for all uses that use a traditional chef's knife, and its light weight and balance enough to be used in even smaller applications than a utility knife or paring knife Shun knives are undeniably expensive, but I find them worth the price.Other Shun knives I own I have used them for several years now (I think I bought my first 6 years ago) and they are still just as effective as when I received them.Due to the angle at which the blade is cut they may need to be sharpened a little more often than a traditional European knife Shun sharpens them for free and I don't have to send mine in for sharpening more than once a year (I p take good care of my knives, which probably increases the intervals between sharpening). I highly recommend this knife.
