It's a necessary thing, but not for idiots.

I read many reviews before buying this set. I have a stainless steel Blaze pan. I had never cooked with a pan, I had never worked in the food industry before, so I was a total novice when it came to using a device like this. I'm a fast learner and here is what I learned. First you need to know your hardware. Second, you need to know the temperature of these devices. Three know how to use the product properly. There are many reviews of this product that just don't reflect the product and highlight the fact that they don't know how to properly use it and their own gear. I assume that in most cases they use a laser thermometer. Alright, here are the details. The pan is made of 304 stainless steel. You can't get an accurate temperature with a laser thermometer, the reason is emissivity. This is a measure of an object's ability to emit infrared energy. A shiny object has a lower emissivity than a black object. Most infrared thermometers are set at 95, 304 stainless steel at 41-45. You can buy laser thermometers with adjustable emissivity, which I did at Thermoworks, but even then I found they were still not accurate as stainless steel changes when heated. stain a little, which then affects the accuracy of the thermometer. You can change the emissivity as the color changes, but I've found it's not very accurate either. Long and short do not use infrared laser thermometers on the pan. Use a surface thermometer such as the Thermoworks Pro-Surface Thermapen. It will immediately tell you the exact surface temperature. Everything changes when you know what you're cooking. Oh, and if you want to use this material. With a frying pan at the right temperature, you can clean a frying pan like new in less than 5 minutes. I know they say three, but there's a little more to cleaning than just using this product. It does most of the work then I finish it off with water mixed with some white vinegar and it stays pristine. I made a video for my cousin cleaning it with one hand and using the phone with the other to show what the thing is doing because he just installed a griddle in his summer kitchen and hasn't used it yet. I knew from experience that he would appreciate it. It used to take me about an hour to bring the pan's surface up to the condition of the new product. So this is a real game changer, now I'm so tempted to use the pan that I don't even think about using the grill very often. If you use a frying pan, at least a stainless steel frying pan, have it handy as it makes cleaning easier.
