Some say it sprays oil, others say otherwise. All I did was flour at the bottom of the dough sheet. All came out fine. I have all the Kitchen Aide rollers and the flat roller spreads the dough wider than necessary - perfect. I just finished my first attempt at making ravioli. I used the manacotti filling recipe with a scoop of fresh mozzarella and a chunk of parmesan and can't wait to try it tomorrow. I almost bought the Catch The Wave DOUGH crimping roller, but ordered it immediately after this purchase. In my opinion, this simplifies the task. I don't think I'll ever use my ravioli maker again. It was so easy I thought I did something wrong. If you like fresh ravioli this is a MUST! Oh and one more thing. If you press too hard while unrolling, your maple roller will be scratched :(
