Helpful, but you have to be selective.

Background: I have been making sauerkraut, pickled cucumbers for more than 20 years. Background in metal chemistry. These fermentation lids seal fairly well, the jar's silicone gasket and airlock boot work and seal well. Airlocks are similar to many of the three-piece designs sold by homebrew suppliers and, despite previous reviews, were never intended or intended to be sterilized in boiling water (common cleaning supplies include brewery detergent and disinfectant), and the instructions specifically state so. This version of the gateway has no fill lines or instructions on how much fill the gateway needs to have in order to function properly and prevent the solution from being sucked back into the enzyme when the process slows. Metal caps are well made and the rounded edges are much less likely to cut or tear the grommet as is common with roughly drilled holes, but the metal the caps are made of is of poor quality and will corrode at the contact points. Soy sauce and pickle for manul jangachi (Korean pickled garlic). Since there are different grades of stainless steel and each has a different chemical resistance, they can be rust free, but I didn't expect that. I've had no issues with the sauerkraut or kimchi I've used them with, but it looks like the user would have to be selective about what they're used with, which would require a plastic lid instead.
