I got my boyfriend an 8 inch Epicure chef's knife for his birthday and he was over the moon. He keeps finding new reasons to use it and it has inspired cooking in our house. He likes the weight distribution and the easy handling. The handle is so amazingly smooth that it feels great in your hand. So far the blade is holding up very well. We used to have a 10" knife that was too big for some things, but our 6" knives weren't big enough to quickly handle arcs or certain cuts when we want the knife to swing. It cuts onions in no time and is especially fun chopping coriander and parsley. I think it's worth the cost. My favorite knife that has a very different style is Pallares Solsona 6 inch kitchen knife with carbon steel blade and boxwood handle. , made in Spain but now available at St. Essen. We recently picked it up to get a new blade and the guy at the store was quick to buy a set. They're more affordable and make great gifts.
