These pans have an even heating surface. They are great for cooking whatever you want to prepare in the kitchen. I only use wooden utensils, they are NOT scratch resistant. Consider the total weight of the dishes. YOU ARE HEAVY! They resemble a saucepan more than a frying pan. I regretted not having donated all my other pans when they arrived. Others said their hands got hot, mine didn't. They stay cold from start to finish. In general, I liked the pans, but I will not buy them again. I would find something lighter with a thick cooktop.
