Review on Ontario Knife Company 7060 Cleaver by Matt Abba

This is a hot toy. good for slicers

I work as a butcher slicer in Boston and I think Ontario loves making small knives. Sure, this cleaver is pretty strong and made out of decent steel, but it's just SOOO small! A cleaver needs a certain amount of weight and weight to get through what is being cut. If I didn't need a lot of moving mass to get through what I was cutting I wouldn't be using a cleaver, I could reach a regular knife to get the job done. For comparison, my Dexter cleaver weighs almost 20 times more than this little thing. Sure, I think Dexter is a bit clumsy, but comparing side-by-side is like putting a plain oven next to a real oven and expecting both to do the same job. I don't know who it's made for, but it's not. the slightest chance that this thing will come in handy for cutting anything other than a bird. It does the fairly simple job of slicing chicken for curry, and for the first time I found it does a good job of butchering Thanksgiving turkeys, but beyond that it takes a little imagination to even call it a cleaver. It won't even fit through lamb chops, which are 90% gristle. Stretch that thing maybe an inch or two either way, make the steel 50% thicker, and you've got a cleaver I'd be reaching for instead of laughing at. . In its current form, this thing would look ridiculous even as a movie prop.
