Good price: cutlery and knife accessories

This is a very good value for money knife. We all know it's not a $100 knife, it's not a $1000 knife, it's a $20 knife. decent, it seems well balanced and sturdy. The fit and finish of the handle to the blade isn't great because I have a gap on both handles, but it's there. If you look at my photos I did a forced mustard patina and I am very happy with it

Great weight and balance! Wonderful Cleaver

Exactly what I needed and wanted in a cleaver. The weight is great, the balance is great and you just can't beat Old Hickory's carbon steel for sharpening. For those who have complained about rusting on old hickory knives, you just don't understand how to take care of these knives! Carbon steel holds an edge very well, but it is NOT stainless and will rust if not properly cared for. With proper care, they sharpen perfectly and last forever.

Nice light cleaver!

Outstanding Cleaver. It's not the weight I typically prefer for a cleaver, but it's maneuverable and gets the job done well. objects" reviews. If you're allowed to have knives and you don't have a severe intellectual disability, you should be able to use them properly. It's carbon steel and will rust if you're really, really stupid. If you're not stupid and can tie your own shoelaces, then you already know that carbon steel requires more maintenance than all that chinese junk. When you clean…

Pros
  • Outstanding Overall Performance
Cons
  • Vulgarity

Quality control for Ontario has really gone downhill. Arrived with the corner of the wooden handle broken and shards in another section. Previously the scales were set on the handle and then trimmed with a shank for a smooth fit. All of these grip scales are prefabricated and glued to the stock with rough edges, creating gaps all around. The quality of the wood has also deteriorated, it is now rough and splintering. The blade also has issues with inclusions. On the surface it looks like…

Nice piece of steel.

I knew this splitting device would require a bit of work to get it in optimal working order, but what I got is nowhere near as complete as one might imagine. It took me over an hour to remove the grinding and gouging marks from my heaviest Indian stone. From what I can tell I have an amazingly sharp 1095 steel cleaver. The scales are of poor quality and need some work too. Nothing extreme here, just light sanding until it feels comfortable in your hand. I then gave the knife a light patina by…

I was (and never have been) disappointed in them

The entire old line of hickory knives and tools are made from 1095 carbon steel, they are well tempered and probably the best deal in the world.. . the world. Cutting tools for those who know how to sharpen. I bought this cleaver to turn into a craft knife because the cleaver is a little thicker than the old hickory butcher knives. I haven't been (and have never been disappointed by them). For those who don't know, carbon steel will tarnish and rust if not properly cared for. their vinegar…

More like a knife just a little heavier

So first the bad: Mine looks like it has a crescent shaped crease that has been fixed. Good: You can get it very sharp with some effort and it seems to hold its edge well. Recommend a kitchen steel rod to finish it. This is my first smartass so to be honest I expected to chop with it like an axe. While this works, pressing down on the spine of the blade and swinging it is much more effective. For example, I pulled out a roll of frozen sausage. I hacked at it like an ax three times before it…

This is a hot toy. good for slicers

I work as a butcher slicer in Boston and I think Ontario loves making small knives. Sure, this cleaver is pretty strong and made out of decent steel, but it's just SOOO small! A cleaver needs a certain amount of weight and weight to get through what is being cut. If I didn't need a lot of moving mass to get through what I was cutting I wouldn't be using a cleaver, I could reach a regular knife to get the job done. For comparison, my Dexter cleaver weighs almost 20 times more than this little…

Excellent service and delivery

Great service and delivery Great knife that every kitchen bar should have! As another reviewer mentioned, vinegar, hot or not (hot only speeds up the process), imparts a protective patina to carbon steel knives. However, lubrication and cleaning are still required! I just marvel at those who complain about rust! Either they are ignorant of what can be cured, or they are lazy, which is impossible! It just shows their lack of reading and comprehension skills and/or ignorance of carbon steel…
