I received several knives from the Wüsthof Classic line as gifts. I needed a few more and thought that would be nice as they carry the Wüsthof name. I was wrong. If you own anything from the Classic range you will immediately notice the difference and how affordable they are. After a bit of research I plan to do before buying, the main difference is that the Classic line knives are forged while the Gourmet lines are stamped. It doesn't seem like a huge difference, but it is. The knives are sharp, I'll admit that. But that's all. They seem light, cheap and fragile. I wouldn't buy them again and given the price I wouldn't consider them a budget purchase. Spend a little more and get the Classic line. They feel better in the hand, have a pleasant weight and are of the best quality in every respect.
