I purchased this item and started using it to make peanuts brittle, I made about 10 batches and the brittleness was like it was boiled soft and then I have I checked with another thermometer, I had to go up to about 280 degrees on this thermometer and up to 250 degrees on the other thermometer, then up to 325 degrees. On this thermometer to get 300, on the other to get a hard crack, needless to say I had 10 batches of tough brittle peanuts too it evaporated inside
