I use these on my 36 inch Blackstone pan. different articles. These spatulas are incredibly heavy for any type of prolonged use. They are also quite fat. The Mercer spatula is very light, yet strong enough to flip heavier foods like steaks and pasta. My only complaint is that the edges are quite sharp, so you'll need to get a file and/or fine sandpaper before using it on the weathered surface. They should last a lifetime though, so spending 5 minutes smoothing out the edges is no big deal. I use 2 of these when you're making fried rice, pasta, or large batches of Philadelphia cheese steak. I wish they were something that light and a bit wider and not as long for pancakes, although for that fit they're very good.
