Review on DALSTRONG Fillet Knife Flexible Gladiator by Raul Choudhury

Aaaah, this is the best knife ever! I am a picky, picky chef/butcher and Dalstrong legally supplied this knife. Perfect blade flexibility. Good bend. I can switch between processing meat and filleting fish. The point is handy for detail work, even boning, and the width of the blade makes slicing steaks, medallions and chops almost sexy. Seriously, this is my FAVORITE knife in my kit. Love the pen, love the sheath, dig Dalstrong's care and attention focused on packaging.
