Textured underside means these mats won't slide around on the work surface while cutting. I didn't see any damage to the top of the carpet from my knife. Each of the mats has a design that can be used when you want to limit the use of the mat to one type of food (vegetable, beef, fish, chicken) and an opening to make lifting easier. They are dishwasher safe. I had two issues with them, both of which might not bother other chefs. The biggest problem was their size. I cook for four and like to have leftovers, so the mats are a bit small for the volume I need for most recipes. The second issue is that I just didn't like the feel of the knife when using it on a thin mat - turns out I prefer having more padding under the knife. If I'm cooking small recipes or storage space is tight, this would be the best choice.
