It is very convenient for hiking. As others have said you don't want to submerge them in water (not suitable for kayaking) but they are great for hiking if the rain catches you by surprise. I use the largest bag for groceries and snacks, a medium sized bag for toiletries and first aid, and the smallest that I wear around my neck with small items I need to keep on hand including cell phone and lighter/matches. It helps keep my backpack organized and protects my essentials from the rain.
