    Lasts ONLY a few years

We have been using this pasta maker for a number of years and are happy with it. However, today we have problems with winding the dough on the rollers. Upon closer inspection, it turned out that both plastic scrapers on the rollers were broken. Also, spare parts are not available online; If someone stocks them, it'll cost around $25-$30 for 2. A brand new identical manufacturer is currently around $43. Basically we have to throw out the old manufacturer. Further research shows that this is a…

    Delicious! - Kitchen & Dining

I've been an online contributor for Cooks Illustrated for almost 20 years, and when I saw that they had a free video course on how to make fresh pasta I jumped at the opportunity. I've never liked the fresh homemade pasta I've eaten before: crumbly, heavy and awful. But if Cooks Illustrated recommends something, I'm willing to try it. This pasta machine was delivered today. It is very heavy and well made. I assume it will last a lifetime. Unfortunately the assembly instructions are in Italian…

Empire Cut production with an old favorite.

I have an Imperia pasta machine that was given to my parents in the late 1960's and which I used regularly when I inherited it in the 1980's. It's a workhorse so I bought a car of the same make and model for my brother. Delivery was prompt and I made a spaghetti dinner out of it that evening to test the rollers and slicers before giving them to him. Observations: The machine worked flawlessly with my favorite pasta recipe and perfectly rolled sheets with adjustable thickness. works well. The…

The product turns metal splinters into a paste when rolled

I tried to buy the same model twice and both had the same problem. The instructions state that a few sample batches of dough should be made and run through the product to remove any grease or metal fragments left behind in the production process. After that, the roller should be safe to use. I kept trying with many batches of dough, but no matter how many times I rolled the dough through the machine, the dough picked up black streaks around the edges where the rollers meet the sidewall. A…

Light years better than other brands

This machine is light years better than other major brands of pasta machines (there are basically two major brands). I test the cutters on these machines by running a regular sheet of paper. paper through them. This eliminates variables associated with the actual test, such as B. Hydration. Another machine's fettuccine cutter has to cut the sheet of paper into individual noodle-shaped strips. Some of the paper is simply scored rather than completely cut and separated from the other strips. The…

    Great little pasta machine

When I was in Italy I took cooking classes and my teacher used an Imperia machine. Needless to say I was planning to buy one when I got back to the US - it's identical to the one I used in Italy. I was a bit skeptical that I could replicate the results of my cooking class as I had never cooked pasta before but I am very happy with this machine and have had excellent results. The only assembly instructions are in Italian. , although it's pretty intuitive if you look at the photos. The…
