Delicious! - Kitchen & Dining

I've been an online contributor for Cooks Illustrated for almost 20 years, and when I saw that they had a free video course on how to make fresh pasta I jumped at the opportunity. I've never liked the fresh homemade pasta I've eaten before: crumbly, heavy and awful. But if Cooks Illustrated recommends something, I'm willing to try it. This pasta machine was delivered today. It is very heavy and well made. I assume it will last a lifetime. Unfortunately the assembly instructions are in Italian but I was able to find out and once they were assembled I was able to switch to the Cooks Illustrated instructions. I haven't had any issues with the complaints I've read about other models, like the black lube coming off the batter or the handle coming off. The noodles (egg noodles) were the best I've ever had, light, great flavor, not even a little sticky. Thanks to this machine and Cooks Illustrated, I just had the best chicken noodle soup.
