Not for slicing kingfish steaks

I bought this specifically for slicing kingfish steaks at home but it didn't cut through the middle bone and wasn't at all effective for that purpose.

Bought this knife to accommodate my growing culinary experience. Good. I proudly use it for everything, and not just meat, but veggies and onions too lol.

Great cleaver for home use

I looked at a lot of cleavers before settling on this one. For the price, Heckells-Zwilling made in Europe seemed to be the best choice. I'm not disappointed.

Blade is too soft to cut hard bones

I initially liked this cleaver but found the blade too soft to cut pickbone. The edge bent badly a couple of times and I had to grind it down a lot to get a straight edge again. I'm going to throw this in the trash and buy a higher quality product from another company. I've been a butcher for a year and have used a cleaver the whole time with no problems, so I consider this article a failure.

So while I probably didn't really "need" to add a cleaver, there was only one brand I would look at if I could convince myself to do it anyway. As usual for them, well made, feels good in the hand and of course (although I don't use it often) there's nothing like banging a knife on a cutting board when cooking!

Go for the choppa! for carving knife

This item is razor sharp and the blade lasts a long time. Can be sharpened well when the time comes. everything you would expect from a Henckels blade. My only criticism is the handle. The edge of the shaft isn't quite flush with the grips on each side. If you run your hand over the top of the handle, you will feel the sharp edge. And it's a square edge, not rounded, so it looks sharp. It's not something that really comes into play when using a blade, it's just a matter of fit and finish. This…

Based on my long experience with many Henckels Classics this is exactly what I expected: super sharp, well balanced and comfortable to hold. Very durable, clean and well managed. Only used for the first time last night; It was pure joy to use! I can't comment on how long it stays sharp as I've only just used it, but the weight and balance of the blade and handle are perfect.
