When boning, the meat stays sharp for about 20 minutes!

I love knives in general BUT this 6 inch Mercer boning knife doesn't have a sharp edge! I can't believe all the rave reviews for this knife. Blade, but it just doesn't stay sharp for more than 10-20 minutes, and yes, I know knives! I've been cutting meat for over 40 years and I know what works and what doesn't. Don't waste your money, my Victorinox knives last a long time before I have to touch them up to steel!

Absolutely razor sharp

I have been looking for a really sharp packer size brisket knife and have used Shuns, Cutco and others in the past and this knife is by far the sharpest. metal I have ever met and contacted. Dry it off with a towel before washing! Carbon steel and razor sharp!

I've read comments that this knife rusts so easily after 3-4 uses. You have to keep in mind that it is HIGH CARBON steel. It may rust if you don't wipe the water with a towel. Of course it says "No stains" on it, but it's true if you leave it in water or highly acidic foods for 4-5 hours. It should be relabeled as "stain-resistant".
