AMAZING skillet, great even crust and rises better than my cast iron

I use this skillet and my cast iron skillet weekly and love both. I've found that for some reason my bread rises better in this pan than in cast iron. Maybe because this pan has a smoother texture? Beats me. This pan is completely non-stick coated. I bake white and wheat bread in it and have never buttered or buttered it. I was just going to suggest that users only use a silicone spatula in it, but come to think of it, have I ever used any type of spatula in it. My bread always falls out…

Great pan = great bread!

I love this pan! The bread swells up and keeps its shape perfectly. Bake until golden brown - not too dark. I love making bread dough in a bread machine and then baking it in the oven to avoid those weird blades. A light brushing is enough and my finished rolls get a nice blush and bake nice and even. A little more than my old 1lb. (Standard bread) bowls. My finished loaves slide out with no residue. The ONLY complaint I have is that they don't have any protrusions on the other ends, so not only does it take…

I love the pan but what happened to the grate?

I used this pan for the first time last night. I have been baking for over 50 years and recently made the decision to bake yeast and sourdough bread. King Arthur Flour is my go-to place for supplies, recipes, help and baking suggestions. She and Cook's Illustrated (Recipes and Appliance Reviews) highly recommended this small 8Β½-inch standard bread pan. And since I only had a 9" Pyrex bread pan and a 9" metal pan, after researching I ordered these. King Arthur Flour has the exact same pan but…
