No cast iron is actually pre-aged. If you want to know how to do this, check out YouTube. When well aged, care for it with standard cast iron care. Avoid washing with soap, don't overheat, don't use acidic foods, etc. In my opinion, the two-sided "option" of this pan is useless as you can't keep both sides seasoned with direct heat on the fire side, it just burns the oil and leaves the surface practically unusable. My decision was to buy two. One for the grill side and one for the grill/plancha side. For the price, it was worth it for my use, but if you only want to cook on one side, stick with it and keep it flavorful to avoid aging the food. Also, the fish oil/fish smell seems to stay in the pan. So you get tired of frying salmon on a Tuesday and making pancakes on the weekend without a thorough treatment of salt and oil. 😳
