It seemed like a great idea.

I have been using this plate for a few months now and what was initially a source of great excitement has turned to customer regret. Let's start from the beginning. Package. The box the lame comes in is good and the molded foam insert is a great touch. The lamé doesn't quite fit perfectly, but it's good enough for what it is. It comes with a pair of blades. These aren't my favorite Feather blades (I've shaved with them for many years), but they're more than enough for slicing bread dough. The blade itself feels great in the hand. That's a nice piece of stainless steel. He's a good weight. The handling is a bit rough and not well finished, but then again. it just needs to cut some bread dough. The real disappointment, however, lies in the design. The whole idea of this lamé is that you can switch between a curved blade and a straight blade. When I first bought this I wasn't sure which I could have preferred. Short answer: either, but not both. The design of the plate itself has (as shown in all the pictures) a thumbscrew that allows you to remove the blade and move the washer to switch between straight and curved blade 'modes'. The same thumbscrew makes it difficult to score the loaf. It's impossible to get a nice clean slit deep enough that the top of the loaf doesn't blow out as it bakes. And the more you try, the more you spoil the bread. Everything about this lame is good enough except for the whole concept. Skip it and buy a more traditional model.
