This tool is great for slicing bread to pattern. It seemed natural to me to hold the plate by the thin spot in the center and use the handle as a free-floating weight so you don't dig too deep into the dough. Stainless steel, but the bolt and nut you turn by hand are not stainless steel and will begin to rust on the blade within a week. I gave a faint soft soak in the CLR, but that shouldn't be a problem.
