I have a stainless steel wooden handle dough cutter/scraper that I love and use all the time, but is featured in the book Secrets of the Jewish Baker (which is great) a smaller, lighter plastic model was recommended. I bought these because they had a silicone rim that didn't scratch my stainless steel bowls. That's what he works for. It measures on both sides, inches on one side, centimeters on the other, and it cuts dough well (thin metal cuts better than medium-thick plastic). It works better with a scraper than a cutter. However, if I were on a desert island and could only pick one, my metal spatula would win instantly. I am concerned about the durability of this product (does the silicone stick to the plastic? Does the plastic become brittle and crack over time?) and for the price it is similar to my stainless steel cutter. So if you need a plastic spatula that won't scratch your bowls, buy this one. If you're just looking for a dough cutter, I highly recommend a metal spatula with a wooden handle (I have pizza dough). Cutter, but I use that for all kinds of tests). What's the benefit of the cutter in the silicone scraper that won't damage my bowls (my dough cutter only has one flat side so won't scratch the bowl just the pegboard) And this scraper can be thrown in the dishwasher (metal wash only though, but it's very simple) In general I find that in the kitchen there is room for both products (both fit easily in a drawer) as each has its own pros and cons and each of them can be used in a baker's kitchen!
